Stand Mixer Buying Advice

!±8± Stand Mixer Buying Advice

Heavy-duty stand mixers are no longer reserved for the professional chef. Many kitchens are now sporting this sleek modern convenience as even the novice cook is finding the benefits of the stand mixer to be invaluable. Stand mixers can finish off time-consuming steps like beating egg whites or whipping cream in a flash, or put a family-size batch of mashed potatoes on the dinner table in mere minutes. Unlike portable mixers, powerful stand mixers can take on heavy-duty chores like blending flour into stiff cookie dough and kneading bread. If you are in the market for a stand mixer, you need to choose the one that fits your lifestyle and budget, whether you're a novice cupcake-baker or a serious home chef.

Mixing Action

Most stand mixers share the same basic setup - a mixer head mounted on a base that holds the mixing bowl. The head tilts up or lifts with a lever so you can attach or remove the beater(s). But all beaters are not created equal.

Budget stand mixers often use the familiar pair of stationary, interlocking beaters seen on hand mixers, with a rotating bowl. If you're an occasional baker, this type of stand mixer can get light tasks done at a bargain price, but be warned, it will likely struggle with stiff cookie or bread dough. The beaters can get too clogged to spin, and the bowl may stop turning. Also, since the beaters can't reach the bowl's edges, you'll be scraping down the sides frequently.

The best choice for most buyers is a stand mixer with "planetary mixing action." In this design a single flat beater (or other attachment) moves the way a planet orbits the sun simultaneously spinning on its own axis and traveling a circular path around the bowl. This motion creates more contact between beater and ingredients, acing tasks like creaming butter or blending flour into dough in record time. Another time saver - the beater makes it to every part of the bowl, so you seldom need to scrape it down.

Power and Speeds

Are you going to use your stand mixer frequently for tough jobs like bread kneading? If so, you'll want a powerful model, but determining power can be confusing. Stand mixer motors are rated in watts. Different mixers offer anywhere from 200 to over 1000 watts of power. But don't be too impressed by a high wattage rating it's mainly a marketing gimmick. Stand mixer tests and reviews consistently show little correlation between wattage and performance. One helpful measure of a stand mixer's true power is the number of cups of flour it can handle. KitchenAid has a "Flour Power" rating in their stand mixer descriptions, ranging from 8 to14 cups depending on the model. A bread enthusiast should choose a stand mixer that can tame 10 or more cups.

Speeds are another case where you shouldn't get hung up on numbers. Stand mixers offer anywhere from 3 to 15 speeds, which are adjusted with dials, slide levers, push buttons, or digital touch pads. Slow speeds incorporate dry ingredients without flinging them out of the bowl; the fastest speeds are used to whip cream or egg whites. You'll want to choose a stand mixer with at least 5 or 6 variations for the best control, but more, while they certainly won't hurt, won't affect performance much.

Attachments

Budget stand mixers may come with a pair of standard chrome or stainless stationary beaters, and not much else. They'll do the trick on simple batters, but if breads, cookies, and meringues are part of your baking routine, you'll get better results if you have the right tools for the job. That's where attachments come in. Opt for a planetary action stand mixer that comes outfitted with a flat beater for efficient stirring/blending, a wire whisk for whipping tasks, and a dough hook tailored for kneading bread. Some stand mixers also come with a splash guard, a pouring chute for adding ingredients, or a very handy second mixing bowl.

Serious cooks should check out mid-to-high-end stand mixers that can accept a myriad of optional attachments. Accessories like juicers, meat grinders, grain mills, pasta makers, sausage stuffers, can openers and shredders can convert a stand mixer into a multi-purpose kitchen workhorse. Of course these extras will boost cost, so carefully consider which ones you'll actually use.

Size Matters

Stand mixers are hefty items, many weighing well over 20 pounds. A heavier all-metal mixer will be more durable than a lightweight, partially plastic model, and also more stable less likely to "walk" across your counter during mixing. A lighter model may need a hand to steady it occasionally not ideal if "hands-free" mixing is your goal. However, if you're planning to stow your stand mixer in a cabinet between uses, lighter can have advantages. Be realistic about how many pounds you can comfortably lift and maneuver.

Many cooks skip the lifting and make their stand mixer a permanent fixture on their countertop. If that's your plan, consider height as well. If the mixer will live under a cabinet, make sure you have sufficient clearance, including enough extra room to tilt the head up.

The other size issue to consider is capacity. Stand mixer bowls hold anywhere from 1 ½ to 7 quarts. 4 to 6 quarts should be plenty for most cooks. If you need to feed a dozen hungry people or make double batches of bread, you can choose a super size 7-quart bowl, but these can be very tall and hard to scrape down, and may be too big when you just need to beat a couple eggs. Some stand mixers come with two bowls of different sizes, letting you pick the best size for the task at hand.

Styling

There's a good chance your stand mixer is going to stay on your countertop, where you'll see it every day. Luckily, these machines are often as decorative as they are functional. Performance is crucial, but once you've identified the features that are right for you, don't be shy about considering looks too. Long gone are the days when a plain white stand mixer was your only choice. KitchenAid offers classic styling in a rainbow of over 20 hues like Almond Cream, Green Apple, and Bing Cherry. Other stand mixer manufacturers have followed suit, so even in the budget range, you'll find a selection of colors.

If classic isn't quite you, Hamilton Beach and Sunbeam offer stand mixers with retro appeal, and DeLonghi's design has a sleek modern edge. Great styling that coordinates with your kitchen will give you one more reason to love your stand mixer.

How to Make Lasagna From Scratch

!±8± How to Make Lasagna From Scratch

A court may seem overwhelming to try, with all its lovely layers, however, that the homemade lasagna is pretty easy if you follow some basic rules. Before you know it, your friends and family ask you to make your "calling card" for all types of meetings, parties and holidays.

The ingredients for lasagna needs are very simple and can be found in any supermarket. You need a box of ready-made lasagna sheets, a large can of pastasauce, 24 ounces of fresh shredded mozzarella cheese, 16 ounces of ricotta or cottage cheese (full fat), and fresh garlic (optional).

Preheat your oven to 350. Next you need to cook the noodles. Boil a large pot of water and submerge the noodles carefully without bending them to a breaking point. As they soften up a bit, you can push them further under the water. Stir them several times as they cook. You'll want to boil them at a full boil for at least 8 minutes. Drain them carefully, leaving a little water in the bottom of the pot to keep them moist while you are preparing the lasagna layers.

Using a 12 x 15 inch glass baking pan, line the bottom with lasagna noodles using tongs to avoid burning yourself. Spread a layer of sauce over top of the noodles. Be sure to spread the sauce all the way to the edges of the pan. Next, add a layer of ricotta or cottage cheese, and then a layer of grated mozzarella cheese. Now start again with a layer of lasagna noodles, and repeat the process until you've reached the top lip of the pan. Save a little extra grated mozzarella so that the very top layer is extra cheesy.

Place the prepared lasagna into the preheated oven at 350. Allow it to bake for at least one hour. After one hour, check the center of the lasagna layers. If they appear hot and melted, and the cheese on the top layer is golden brown, your lasagna is complete. Remove from the oven and allow to cool for 15 minutes before digging in!

The New York Times recently that confidential grinding logs and other records of several meat processing plants examined and interviewed staff in the sector. These studies have shown that the ingredients that have been sold in ground beef by typical food processing companies and fast food restaurants and finally sold to consumers.

In particular, the study of the formation of ground beef hamburgers that were identified included E. coli and were the focusThe subject of an October 2007 recall of more than £ 844,000 of beef by large companies in the food industry, Cargill. Tragically, the patties contaminated with a woman brought up in Minnesota to solidify from the side, after eating a contaminated cake.

The investigation revealed the contaminated ground beef burger on the following ingredients together:

- The fresh fat - Approximately 35% of minced meat. Fresh fat is the fatty acid from the margins of whole pieces of beef cattle. This meat is usually 50%Fat and 50% meat.

- Fresh Lean - Approximately 35% meat burgers. The meat came from dairy ingredients from old cows and bulls, which were generally not strong enough, young enough, or at least worthy to be fattened in the pasture. Trimmings are parties to several Beef and fat that is removed from the bones, and in the vicinity of the skins and other ends, and is usually extracted using advanced meat recovery methods. Trimmings are not pieces of meat fairly primitive.

- Frozen Lean -Approximately 20% of the ground beef. These trimmings came from grass fed cattle. Grass fed cattle is typically leaner than corn fed cattle.

- Lean Finely Textured Beef - Approximately 10% of the beef. These trimmings were run through a high speed centrifuge to remove fat from the meat and treated with ammonia to kill any bacteria and pathogens.

The four ingredients above were sourced from meat processing plants in the following locations:

- Omaha, Nebraska

- San Angelo, Texas

- Uruguay

- Dakota, Dunes, South Dakota

As seen, Cargill, the company that sold the contaminated hamburger meat, sourced the meat and trimmings for their ground beef from multiple suppliers at multiple worldwide locations. This, along with the meat and trimming parts themselves, helps contribute to the difficulty in producing ground beef that is free of food borne pathogens like E. Coli or salmonella.

How can you buy and eat healthier and pathogen free ground beef? One solution; buy whole, primal cuts of meat and grind the meat at home using a meat grinder.

Traditional home-made Sicilian sausage

!±8± Traditional home-made Sicilian sausage

Over the years occupied I tried a variety of store bought Italian sausages, which are fine, but never on the quality of Italian sausages made by my grandfather when I was a child. I always had the recipe for this tasty sausage, but never had time to do it.

Yes, your own sausage takes time and you need much help in the kitchen to prepare a family recipe. Anyone who has ever been made Italian sausage, you know how you startOwner sausage is not the mixer. The mixer is the person who mixed all the ingredients to make the sausage stuffer.

If you're new to the grinding, mixing or filling, then you get to keep the sausage in the front so that the shell does not break and make sure that all the air bubbles out. Only when you master this technique you can work your way through the ranks of the mixer mill and Stuffer.

For generations, the Sicilians were meat products, where theparticular way. Every city or house would be a different type of sausage family. The different types of meat and spice mixture that was used. Every home should have at least one thing in common and that would be the grinder and sausage filling.

So you can imagine how happy I was when my aunt asked me if I wanted my grandfather's sausage-making equipment. Yes, I know I can buy accessories for my Kitchen Aid or food for work, but we all know that the taste will not besuch as meat subjected to 50 pounds of cold steel kitchen table next to you. There is something for hours, grinding, mixing and filling by hand, the sausage gives you more love you need is to create perfection.

Now you can remind me that halfway through this process, you will definitely start losing all your modern appliances. That's why more people are using the kitchen to get the game when your tired arms from the elbowMeat.

So if I'm not gone, only fear, they can continue to access the material needed to create this miracle. I will first enter the old version of equipment and then the modern version features only if you decide to take the easy way out.

The version of my aunt gave me was the old heavy hand crank versions with a grinder and sausage. There was also a mesh sides, I can remember my grandmother and grate cheese and bread, in turnBreadcrumbs.

The modern version of these tools are just one, and sausage stuffing mixer mill attachments that you can buy with Kitchen Aid mixer. This method is much faster and less tiring for the arms.

Here is the recipe for my grandfather's Sicilian sausage. It can be used to make into a link, or you can leave part of it into the ground to use with your favorite pasta. I usually make a cream sauce sausage mixture in bulk or in my salsa.

INGREDIENTS

25Pound pork shoulder, pork wrap (get from Butcher) 1 / 4 cup whole fennel seeds 1 / 2 cup freshly ground black pepper 3 / 4 cup of salt 1 / 2 cup paprika 1 / 4 cup dried basil 1 / 8 cup dried oregano 1 / 2 cup chopped fresh parsley 1 / 4 cup minced garlic 1 / 4 cup chopped red pepper (optional) 1 / 2 cup red wine

PREPARATION

The body overnight in salt water. Rinse well before the housing and in 18-inch incisionPieces. Keep the container in a small bowl of warm water. Cut the pork into cubes of 1 cm to keep some 'fat on the meat so the meat stays moist. The best value for this is the fat of meat 80% to 20%. With the meat grinding attachment, grind the meat in a sort of texture Mett. In a large deep skillet season the meat with the remaining ingredients together and mixed thoroughly by hand until all the spices through. For best results, I like the mixture overnight in the refrigerator tlet the spices blend. Take the meat out of the fridge and let it stand for about 30 minutes to reach room temperature. It makes stuffing a lot easier and doesn't clog up the tube. Test the flavor of the sausage by frying some up in a pan. Adjust seasoning accordingly before stuffing. Using a tube attachment, carefully slide the casing on the tube. Stuff the casing with sausage mixture being careful not break the casing. Remove any air bubbles with a toothpick. This is a two person Work. A turn of the handle for the sausage and one hold to the sausage as you do stuff. They want to turn the shell around every 7 inches, or how long your stay.

If your ready to cook them ready to be frozen, or give away. Be sure to always include the whole family at the time of large sausage or Italian meal.

Have fun!
